French toast is one of my husband’s favorite breakfast dishes, so when I surprised him with my “Banana Bacon Chocolate Chip French Toast Recipe” on a week day recently, he just couldn’t believe his eyes. His exact words where, “Wow! What is going on here, Julie? This looks scrumptious!” My response was, “Oh, just something I whipped up!” 😆

First Start with Homemade Banana Bread
I was actually being honest. The special French toast really just happened by accident. You see, while I searched the fridge for ingredients for a quick omelette, I noticed the Banana Bread (with added chocolate chips) that I made a few days ago was still in there 😲. At first, I thought I would just toast it, but then visions of French toast danced in my head. Here’s my sister’s famous Banana Bread Recipe if you want the best ever banana bread recipe…

While I was getting the eggs out, I noticed I had leftover turkey bacon bits I had used for a salad. I knew they would add a little savory to the extra sweet banana bread French toast. Doesn’t it just look so yummy? I was quite impressed with my leftover skills!

French Toast Cooking Tip
One very important tip I want to point out to you is that I don’t usually measure for French toast, but there’s good reason. If you look at my French toast cooking below you will notice how thick the egg coating is on each piece. The way I get that coating is to pour the extra egg mixture over the pieces of bread instead of letting it go to waste (after I dip them in it of course). It really makes for a better flavored, less soggy French toast. Use up that egg mixture folks! Also, using 1 egg per 2 pieces usually is just about right (see full recipe below).

Banana Bacon Chocolate Chip French Toast Recipe
Banana Bacon Chocolate Chip French Toast Recipe

Thick sliced sweet banana bread loaded with chocolate chips makes the best French toast! Just top it off with savory bacon bits and tons of real maple syrup.
Ingredients
- Leftover Banana Chocolate Chip Bread (see my recipe in "Instructions")
- 2-4 slices of well done bacon diced into bits (I used turkey bacon)
- 2 large eggs
- 1/8 cup skim milk
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- cooking spray
Instructions
*First you'll need 4 thick 1 inch slices of my leftover Banana Bread (RECIPE FOUND HERE -also add 1 cup of semi-sweet chocolate chips to the original Banana Bread Recipe)
Spray a large frying pan with cooking spray (leave heat off for now).
In a medium bowl, beat both eggs, milk, cinnamon, and vanilla until very frothy (the cinnamon ends up floating to the top, that's okay).
Turn your large frying pan on to medium heat and let it warm up a minute or 2.
Dip each slice of banana bread into the egg mixture and flip it over. Let it sit there just for a few seconds.
Lift up with tongs, but don't remove the excess egg mixure from the piece of bread, just let it fall onto the pan under your slice when you put the slice on your pan.
Cook each side until golden brown...it shouldn't take long (use a spatula to check it).
Place 2 pieces on a plate and garnish with the bacon bits.
Pour real Maple syrup over the top & serve with a fun fruit kabob like mine in the photo (strawberries, banana, and grapes).
