I don’t know about you, but I have definitely come down with the “Winter blues”. Oh, there’s no need to worry about the redhead, I’m not in a deep depression or anything, but I do feel lazier than usual, hungrier than usual, and just down right sad with the many issues we are all dealing with today. I suppose my sprained ankle, and lack of vitamin D hasn’t helped. With all of that being said, there’s no better way to feel better than with the comfort of your family around a big dinner table full of scrumptious food, right? I don’t pretend to not find comfort in food. It’s just something we all naturally do and should do. However, I still want that comfort without making myself feel worse by not fitting into my shorts when the sun decides to show up. The good news is, this is possible! So today, I’m going to share my version of a “Comforting Low Carb Chicken Dinner Feast” that will knock your slippers off.

The first thing we need is a FANTASTIC chicken recipe. I mean really super duper fantastic.
A few weeks ago you may remember that I shared my “Chicken Loretta” recipe. Well, you won’t believe it, but it actually went viral on Pinterest 😯 . I realized quick that folks are in desperate need of a tender chicken recipe that uses common staple ingredients, and one that also doesn’t cost a small fortune to make. To top it all off, “Chicken Loretta” is also low carb. Bingo. The perfect chicken recipe for my “Comforting Low Carb Chicken Dinner Feast”. Okay, now that the chicken is settled…we need a carb. Wait! Maybe we don’t need a carb. I know, I know it’s scary to think of a comforting meal without a complex carbohydrate, but trust me on this one. Cauliflower mashed potatoes are so incredibly yummy (and are a good for you carbohydrate). If you haven’t tried them yet, you are missing out on all the rage. Popular grocery stores even sell ready to mash cauliflower in the frozen section now, so you know they must be in demand. My version is very simple and they compliment any meal where you would normally eat regular mashed potatoes. The flavor is intense, and I actually prefer them over old school mashed potatoes. Oh, and think about all the nutrients you’ll be getting. You’ll need 1 whole cauliflower, and this simple recipe…
On to the side veggie. I think the photo speaks for itself, but I will tell you that my “Balsamic Green Beans” were a huge hit on Thanksgiving 2 years ago and now we have them every year. They have a tangy flavor that will compliment the nutty potatoes, and savory chicken. I promise.

OMYGOSH…this all looks so GOOOOOD….while I just can’t abide thighs, I have to try it with white meat…and I know the dark meats are better for you. My taste buds just don’t believe it. 🙂

I’ve made Aunt Loretta’s chicken recipe twice now and it just get’s better. I have a similar recipe using chicken breasts that is also very good…it came from the label on Hellmann’s mayonnaise. But since I favor the dark meat of a chicken, this is my new favorite recipe. I pair it with oven roasted Brussel sprouts, parsnips and carrots.
