As I sit here watching our new kitten climb up the haggard Christmas tree, I can’t help but feel sad that the holidays are coming to a close.  I stepped on the scale this morning and was shocked, my house is a disaster, I have about 50 items to return/exchange, I’m behind on several projects for this blog, and I’m generally exhausted from head to toe, yet I’m still sad that it’s over?  Yep.  With that being said, I always welcome the New Year with grateful ambition and {hopefully} the energy to go another round.  Are you ready to join me in 2018?  I sure hope you will, we have exciting changes to come, and many DIY ideas to bring to fruition.  Until then, let’s eat “Lobster Salad Appetizer Toasts”, and get toasty.  Happy 2018 to all!

PS: These can be made with canned or fresh crab, tuna, or even chicken.  No need to buy expensive shell fish if you don’t want to.  TIP: I found the mini frozen “lobster tails” at Costco.  I used 1/2 of the bag for this recipe and plan to use the rest in pasta.

Lobster Salad Appetizer Toasts

Ingredients

  • 1 lb. lobster (or shrimp, crab, or tuna) diced up in small chunks
  • 1-2 tablespoons onion diced small (chives or scallions are best)
  • 2-3 stalks of celery diced small
  • 1 cup Hellman's mayo
  • S & P to taste

Instructions

Mix all ingredients listed above in medium bowl. Chill until ready to serve and serve with my "toasts" listed in the article, or any garlic bread, sliced baguettes, crostinis, or crackers will work.

    Hi Julie, I know I am late post, but each time I try to comment, and post on cut tent post, it will not allow me to do so. The site move constantly. With each letter I type, the page move back up to the top. And when I try to hit post, it never stand still to allow me to post.

    By the way, this salad looks amazing, and I know it taste amazing as well. Please advise as to what could be the problem tge reason this is happening.

      Hi Ivory, Oh no! I’m not sure why that would be happening. I haven’t had anyone else tell me that this is happening to them. Can you restart your computer and try that to see if it helps?
