I wish I could tell you that I have a big bountiful garden full of huge zucchini, and yellow summer squash, but to be completely honest, I don’t even have a dinky tomato plant like I usually do every year π. In fact, all I have is a very depressed Basil plant on it’s last leg.

Okay, so where did I get the squash for this “Simple Roasted Zucchini & Yellow Squash Recipe”? I actually ordered the green and yellow squash from Costco, and ended up with way more than I needed. I didn’t know what I was going to do with all of it, but had several recipes in my head from the past that you will see at the end of this post.
It wasn’t until I was on my Pinterest boards (are you on there?) pinning new recipes that I came across this zucchini & yellow squash recipe that looked so beautiful, and sounded so healthy, I just had to try it. I am so happy I did (so is my husband π), because now I get to share the original recipe with you. Here’s a few tips I think are important when making this yummy side dish for your family…
In the original recipe it mentions “salting” the slices of zucchini and yellow squash before you assemble the dish. I truly believe this brilliant tip helped take the texture of the dish over top. No one likes mushy zucchini & squash, and this takes care of that for you. Just salt your slices for approximately 10 minutes, and then pat dry with a paper towel. Below you can see how much water comes to the surface of the squash slices.
Another tip I want you to know about is the size of the zucchini and yellow squash really does matter if you want the dish to look like Gordon Ramsey made it himself π. Try to pick equal sized veggies so they line up nicely. Oh, I guess it really doesn’t matter (it’s up to you!), but you can see how mine was a little lopsided, but it still fit.
Lastly, it may seem like broiling the dish for a quick 10 minutes at the end isn’t necessary. Well…I’m here to tell you that it is. Just do it. It really gives that Parmesan mixture an extra golden crunch.
