Well, we’re at that time of year where days start slowly getting warmer, mud starts somehow creeping through the house and green food is suddenly good to eat. Ya know…because of St. Patrick’s Day? Kids and adults alike who would never touch anything green to their lips now don’t have a problem with it. That’s because those St. Patrick’s green foods tend to be sweet and delicious.

Nothing like the green food of January.

Today I’m jumping on the green food bandwagon and sharing with you Pistachio Pudding Bread. This is one of my favorite semi-homemade quick breads. It’s semi-homemade because it starts with a boxed cake mix and a pudding mix. Two things you just can’t go wrong with, right?

The pistachio pudding gives the sweet cinnamon bread its nice green color. The color is just a bonus, though. What takes center stage in my mind is the brown sugar streusel that bakes in the middle and sits on the top of the bread.

It’s like you’re eating a cake for breakfast. But so much healthier, because it’s “bread”. You trackin’ with me here?

This recipe makes two loves, which means it is perfect for serving to a crowd, giving one to a friend, or storing in the freezer for a rainy day. And feel free to get creative with your cake flavors and pudding flavors! Think red velvet cake and cream cheese pudding…spice cake and vanilla pudding….Any way you choose, I think you’ll quickly fall in love with this simple recipe.
