We hope that you all had an amazing holiday season. We enjoyed our time together as a family so much. The time leading up to Christmas was crazy busy for us, but the actual Christmas weekend was very low key. Lots of watching movies, doing odd jobs around the house and eating tons of good food.
And now it’s time to get back to reality. Due to the uber amount of decadent treats that we share on Tastes of Lizzy T, you may not have known that we like to eat paleo-style meals at meal times. Our motto is “Healthy With a Little Bit of Happy”, after all. During the Christmas season it was a lot more “happy” than “healthy”, so we are taking the month of January to get back on track. This week we started a Whole30 (find out about this eating program here). This will be our fourth time completing this month of clean, paleo-style eating. It’s not the easiest eating plan to do, but we’re getting better at it, making paleo versions of some of our favorite comfort foods. And the way we feel when we are done with the month is so worth the struggle of the detoxing. Cravings are curbed, energy increases, inches are lost.
These Paleo Italian Chicken Fingers are grain free, gluten free, sugar free and dairy free, but you would never guess it. They are crispy, savory and bursting with flavor. The kids love them! It’s also a great meal to serve to guests when you are on a healthy eating plan. They’ll never know that they are eating “clean”. Sneaky, right?
