We had a really busy Sunday yesterday.
On the way home, I started thinking about what I had on hand to make for dinner that would be good,
but not crazy on the calories or fat.
I remembered that I bought imitation crab and had it in the freezer.
Sometimes I use it in a pasta dish, but I was craving something crunchy.
I looked up a bunch of different crab cake recipes and none of them were low fat.
I made up my own version using egg beaters, light mayo, and Pam to cook them in.
I also decided to use dijon and lemon for flavor.
They were fantastic, and with the cole slaw, they were over the top.
If you’re going to make these, don’t skip the cole slaw!

Time to eat lunch and I get to eat this left over plate of “Crab Cakes & Tangy Slaw” from last night.
Yum.
Ingredients
- 8 oz. real or imitation crab shredded or diced (I used imitation because I happen to love it)
- 1/2 cup light mayo
- 1/2 cup Italian or plain bread crumbs
- 2 tablespoons egg beaters
- 1/4 teaspoon dijon mustard
- 1/2 teaspoon lemon juice
- 1 tablespoons copped onion (green is best)
- 1 tablespoon chopped sweet pepper-any color
- pepper to taste
- chives and/or parsley to garnish
- (cole slaw-see below)
Instructions
Add all ingredients to a bowl. Mix well, and form patties. This made 6 medium sized patties like you see in photo. 2 was enough for me, but my hubby ate 3.
Get your pan ready with a little Pam sprayed on it. Put patties in pan and cook on each side on medium low for about 5-7 minutes each. I really took my time with these because I wanted a nice crispy outside.
