Happy October! The month of cooler breezes, falling leaves, hoodies, bonfires, candy corn and boots. Those are a few of my favorite things! Although we bake year round, cooler weather brings the joy back to my baking life. Turning on the oven in the morning gives the house such warmth. And really…who needs candles when you’re baking with pumpkin and cinnamon?
One of my favorite treats for this season are these White Chocolate M&M Cookie Bars. I never considered myself a huge lover of white chocolate, but these cookie bars won me over. We took our potato chip cookie recipe and made them into gooey cookie bars that are stuffed with white chocolate M&M’s. If that isn’t enough, we put a pretty white chocolate drizzle on top! White chocolate overload? You betcha!
Because we tend to not have any self-control when it comes to sweets, we like to give away most of the baked goods that we make. These got delivered to a group of my husband’s friends who were putting a roof on a house. They were more than happy to take a cookie break and said these bars were the best ever! There’s nothing better than seeing a smile on someone’s face that was put there by one of your own home-baked creations.
Salty potato chips and sweet white chocolate? The perfect combination. If you’re looking for a quick, festive treat for a fall-party, this is the one for you!
