Diet Dr. Pepper Shredded Pork 





 Excuse me while I continue to drool over this sandwich.  These are so delicious.  I’ll share the recipe in a minute.  First, I must share this cute story with you.  It was Easter Sunday and my parents were expected to arrive shortly for our annual Easter celebration.  We were busy preparing the ham with all of the trimmings except the home made beans were my parents responsibility.  We knew the ham would take a while, so we ended up getting out our left over shredded pork and had a late lunch.  We had just finished cleaning up, when my parents arrived with warm beans in hand.  We began to discuss the ham, and how much it was, where I got it…you know, usual family stuff.  At least in my family anyhow.  So, then my Dad noticed that on my computer screen there was this gorgeous photo of the shredded pork sandwich that I had photographed earlier because I knew it would make a great post.




He says, “Oh!  Yah!  I got that recipe off your blog!”  I said, “What?  I didn’t write about it yet, Dad.”  He said, “Oh, well, I saw it somewhere.  I made it last night.”  I said, “Your kiddin, I made it last night too (crooked puzzled face look).”  He asks, “Really?”  I asked, “Did you make the cole slaw too?”  He says, “Yes!”  I looked at my Mom, and she looked at me, and we couldn’t speak.  I went over to the window where Rick was shooting his bow, and “mouthed” to him what I just heard.  He gave me this strange/shocked “what the heck” look.  Then I walked back over to my Dad…”Wait, did you use Dr. Pepper?”  He says, “Well, no, it was root beer.” lol  I still can’t believe this.  I mean for us to make almost the exact recipe, the same night, with out ever making it before, is really some coincidence, don’t you think?  Rick said we must have some sort of “food”connection.  I think so!  So then after we all settled down and told the kids, and laughed a while…I say, “Well, we just had one because we were hungry.”  My Mom says, “Don’t worry about it, we just had one too!”  (If you’re not laughing, you need to go back and read it again) Funny stuff.  Families are the best aren’t they?  And yes, you can make this with root beer, or Coke if you like.  I used diet Dr. Pepper so it would be lower calorie.  By the way…my Dad saw the recipe in a magazine, but it was a different version 😉
Redhead’s Diet Dr. Pepper Shredded Pork (crock pot version)
1 pork loin (2-3 lbs.) -when I opened mine, there were 2 small ones in there.
2 cans diet Dr. Pepper
fresh garlic (lots)
1 small can diced tomatoes (14.5 oz)
splash of worcestershire sauce
S & P to taste
buns (I used 70 calorie light hamburger buns)
Throw it all into a crock pot and let it cook on high for 8 hours.  Shred the pork with a fork.    If it’s difficult to do, it’s not ready yet.  It should fall apart easily.  There will be quite a bit of sauce at this point still.  The longer you cook it, the more it will reduce.   
Tangy Cole Slaw
6 cups shredded cabbage (I use bagged kind)
3/4 cup light mayo
3 tablespoons white vinegar
2 tablespoons sugar
1 tablespoon mustard
pepper to taste
Just mix, and chill.  You can add the cole slaw to the top of the pork, or just have it as a side.  My hubby loved his on top.  Me too.  Serve with some chips, and a cold Dr. Pepper.  Yummo!

    I LOVE this story! Some things in life.. are not just coincidence. We are truly connected, in this case, totally through the stomach! 😉 Can’t wait to try this recipe. I used to get a sandwich just like this over in North Carolina, with a Cherry Vanilla Lemon Sundrop! lol I can’t wait to try making this on my own.

    I’m making this recipe for a party of 17 people. How many do you think it feeds “as is”?

      I just made 1 batch and it fed 4 people for 2 nights. So, I would double the recipe. Just use the larger pork loins.

    I’m a new diabetic and I always made pulled pork with Dr pepper or root beer but I didn’t know if the diet version would work. Thank you very much oh and I’m going to eat mine on top of a cooked sweet potato! Yum!
