Oh Mama!
Have I got a secret for you… I was 19 (1989) when my husband, Richard, introduced me to his family. I fell even more in love with him while watching him with his family. So now…here we are 23 years later making meatballs on a Friday night I have to give credit to two special women… Enjoy! Ingredients:
****You will need prepared tomato sauce (Rick’s recipe here)…jar sauce is fine too! You can omit the pork in Rick’s recipe and use these instead if preparing the sauce from scratch. 16 oz. Ground Chicken (trust me…it’s not dry like turkey and beats beef by a mile)
1 Cup Italian Bread Crumbs (I use Progresso) 1 egg 1/4 Cup Milk 1/2 Cup Parmesan Cheese 1 Teaspoon Basil 1 Teaspoon Oregano S&P to taste Mix it all up, and form balls. You can dip your fingers in water to help them not stick to your hands. Drop raw balls in hot sauce. Simmer for about 30 minutes, or longer. Please let me know if you make them!
