My sister, Carolyn is 7 years my senior. When I was little she got stuck babysitting me a lot. I felt bad about that, but I have to admit it was fun. Even though she was only a teenager, she had (and still has) amazing cooking skills. Especially, in the BAKING department. I’m positive my love of cooking has a lot to do with her.
Carolyn would get home from school before me since she was in high school. I would jump off the bus and walk through the door to a teenage baking factory. It was like “Carolyn’s Cafe” and she was only 16! From cookies to brownies. I would grab the milk, and have a feast of sweets even before Mom & Dad got home from work.
The most memorable baking dish, was by far, her “Butterscotch Brownies”. The sweet, yet salty, chewy, get in my belly brownie that no one can turn away. They are absolutely incredible. And different.

You probably have all the ingredients, too. That is what makes these even better. They don’t take hours of prep, and you don’t need a lot of cooking experience to make them.
Be prepared, they don’t last long.
Just say, “Thanks, Carolyn” when you’re done gulping the milk afterward.
*Below you will find Carolyn’s hand written recipe, and then below that you will find my printable recipe that is slightly modified to the way I made them with out coconut. I opted not to use coconut and they still turned out great like Carolyn said they would because she has made them that way too. She also mixed everything in the pan, where I used a bowl. You can decide what works best for you, but both ways work.
