Have you ever heard of a “soup mate”? My husband and I joke around about how not only are we “soul mates”, but we are also “soup mates” 😆. What can I say, folks? He loves my soup (and I love eating it with him), and the proof is in the photo below. Yes, it really is him slurping up the last of this yummy bean soup I am presenting to you today! Nothing brings me greater joy than showing him how much I love him with food….
Okay, enough off the mushy stuff, I want to tell you how I ended up making this soup without really knowing what I was doing 😆. You see, I had been craving soup for a couple days and knew I had one can of white beans in the cupboard, and tons of boxed chicken stock. So, then I looked in the fridge and realized I had a bag of spinach, and a full package of smoked turkey sausage (gotta love when you don’t have to defrost anything). I even asked my husband if he thought the sausage would be a good fit with the beans and spinach, and he thought it definitely would. He was so right! I have an important tip for the best sausage, spinach, & bean soup I want you to know about because it really makes a big difference in the texture in this recipe. Years ago I noticed how my Italian husband cut his Italian sausage longer, on an angle, and thinner for tomato sauce, and I was amazed. There’s just something about that long, thin angle that makes any sausage seem more authentic and homemade 😊. You can really see the cut of the sausage slices here…long, thin, and angled.

I honestly had no idea I would be doing a post on this soup, but just had to share it with you after it turned out so wonderful with hardly any effort or cooking time. The nuttiness of the beans, the savory sausage, and the depth of the added greens really satisfy the heartiest of appetites. My husband was slurping and just couldn’t get enough. The Printable Recipe for Redhead’s Sausage, Spinach, & Bean Soup
Redhead's Simple Sausage, Spinach, & Bean Soup Recipe
Redhead's Simple Sausage, Spinach & Bean Soup is packed with savory sausage, hearty veggies, and whips up in just a couple minutes. Serve over rice, pasta, or even pierogi.
Ingredients
- 2 tablespoons olive oil
- 3 large cloves garlic minced
- 1 medium onion chopped
- 3 celery stalks chopped
- 1/2 cup sliced carrots
- 48 oz. chicken stock (you will need 1 and 1/2 32 oz. box of chicken stock)
- 16 oz. package of Eckrich Smoked Turkey Sausage sliced thin & long (explained in post)
- 6 oz. fresh spinach (add more if desired)
- 1 15.5 oz. can white cannellini (or Great Northern) strained but no need to rinse
- salt & pepper
- parsley
Instructions
- Add olive oil to large pot on medium heat.
- Add garlic and onion and sauté for 3 minutes until translucent.
- Add celery, carrots, and sauté another 5 minutes.
- Salt & pepper veggies to taste.
- Add chicken stock and turn up heat so it comes to a simmer.
- After 5 (or more) minutes of simmering, add sliced sausage, spinach, and beans. Stir well and bring back to a simmer. After it reaches simmer, turn down to low.
- Add a little more salt & pepper after you test broth to your liking.
- Add a little parsely at end.
- Serve over rice (or pasta/pierogi).
Notes
Simmer = light boil but not too high.
Use leftover chicken stock from the second box to add to the soup the next day if you want it to go further. You can also add more spinach to livven it up!
