Broccoli Casserole

Did you know that it is absolutely possible to eat healthier and actually enjoy it? I’m not sure why so many cultures make us think that if you aren’t putting a big glob of cheese on something, it won’t taste good ๐Ÿ™„. It frustrates the heck out of me to see so many folks eating way too much cheese (saturated fat). Okay, I admit it, I have become the cheese police ๐Ÿ‘ฎโ€โ™€๏ธ. Now it’s time for me to arrest you, and take you on a ride in my cop car, so I can tell you how to make a healthy casserole without a big glob of cheese on top. This creamy tasty Broccoli Casserole pairs well with my popular “Chicken Loretta” recipe. Yum.

Don’t get me wrong, of course I love cheese. My favorite food is pizza, but that doesn’t mean I’m going to put cheese on everything I eat. Let me rephrase that last part…”that doesn’t mean I’m going to put high saturated fat cheese on everything I eat”. Fortunately, there are many alternatives and one of my favorites is low fat, or fat free cottage cheese.

Even the kids will love this delicious broccoli casserole! This creamy broccoli casserole is loaded with healthy ingredients, but no one has to know except you. Everyone will be asking for the recipe!

So, yes this Broccoli Casserole Recipe does have low fat cottage cheese in it and you will be amazed at how it really helps bind all of the ingredients together while also adding an amazing cheesy texture without all of that saturated fat. If you love green bean casserole, you are also going to love this broccoli casserole…possibly even more! You are free to go, now ๐Ÿ˜‚.

Broccoli Casserole

Broccoli Casserole

Even the kids will love this delicious broccoli casserole! This creamy broccoli casserole is loaded with healthy ingredients, but no one has to know except you. Everyone will be asking for the recipe! (If 8 servings is too much you can split this recipe in half, just still use 1 egg and a 9x9 baking dish.)

Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes

Ingredients

  • 6 cups raw broccoli chopped in 1 inch pieces
  • 1 can of cream of mushroom soup
  • 1/2 cup skim milk
  • 1 cup fat free (or low fat) cottage cheese
  • 1 egg
  • 1/4 cup parmesan
  • 1 cup dried onions
  • 1 tablespoon parsley
  • salt & pepper to taste
  • sprinkle of paprika

Instructions

Preheat oven to 350 degrees. Spray 13x9 baking dish with cooking spray. Wash a large "bunch" of broccoli and cut up into 1 inch chunks. In a large bowl, combine broccoli and remaining ingredients except the paprika. Spread into baking dish and sprinkle with paprika. Bake uncovered for approximately 35-40 minutes. Serve hot with my Chicken Loretta Recipe.

SURGERY UPDATE: I am on day 17 after my laser lipo tummy tuck surgery and I can not lie, it has been rough. I’m not sure if it’s because of my age, my sensitivity as a redhead (that is a thing), or simply because I had a lot of work done, but either way, I have been going through lots of pain since surgery. On a bright note, I am getting slightly better every day, and I do see great results surfacing. I have been spending my days doing my chores and that is about all I can handle right now. This recipe took me 2 weeks to write, lol. I will be back next week (hopefully) with a gorgeous SPRING GIVEAWAY!

    Good luck on continued recovery and just remember how it will all be oh so worth it. Also – I have a broccoli casserole that Mom served for easter each year. It is very similar to this one, but also had water chessnuts which added great crunch! Give it a go sometime!

    I wondered what happened to you. Now I know! Glad you’re back. I have a question for you, why did you get a tummy tuck? The photo you posted in your bathing suit awhile back looked really good. Just wondering. Anyway glad you are on the mend and keep on trucking!
    I am going to make the casserole, but don’t care for mushrooms, so will replace the soup with cream of celery or chicken. Sounds delicious.

      Hi, Bette! Thank you! That is a great substitute if you don’t like mushroom. I was thinking folks might ask this question about my belly. That bathing suit covered my “cesarean” pouch really really well. Plus the lighting was good, lol. They removed almost 3 liters of fat from my belly. The 2 cesareans left a pouch that hung down. I hated it for 20 years! I will share photos as soon as I am completely healed. Probably early summer. You will understand better than. Thanks, girl!! XO
