If you missed last week’s “Butcher Block Cheese Board Giveaway“, no worries because I decided to have another giveaway this week (woot woot!😎), only this one is all about an amazing recipe/cookbook. Not only am I sharing a wonderful recipe from my new cookbook, but I’m also giving away a free copy of the hand held REAL cookbook. Early on in my blogging career, I became pals with famous chef Valerie Brunmeir, from “Valerie’s Kitchen” . If you don’t follow Valerie yet, you are truly missing out. Not only is she an amazing cook, mom, wife, and just an all around wonderful person, but she has always been such a supportive friend to me in blog land. I have truly enjoyed watching her succeed and grow over the years and have tried many of her easy to follow recipes. When I found out she wrote a real live hand held cookbook, I had to have it.

I asked Valerie if she would be interested in offering a couple of her cookbooks to me and my friend Jane from Cottage at the Crossroads so we could give them away to you. She was absolutely honored to give 2 of her new cookbooks “The Foolproof Family Slow Cooker (and Other One-Pot Solutions)” away to our readers. So, yes…Jane and I are giving 2 of these slow cooker/one-pot solution cookbooks to 2 of our lucky readers.

I admit, I still love my crockpot, so looking through this real live cookbook was such a treat. There’s just nothing better than real cookbooks that you can hold in my opinion. I honestly couldn’t narrow it down to one recipe to share, until I asked the kiddos. Once they decided on Val’s “Creamy Tomato Tortellini Soup”, I actually brought Val’s cookbook, my crockpot, and most of the ingredients to Canada with us when we went on a 3 night Toronto getaway and I made it there (I ordered the remaining ingredients this way). I was able to get it into my crockpot in the late morning, and then go out for the day sight seeing, and it was ready for us when we got back. Let me tell ya, it smelled so good when we got to our condo.

Everyone, including my husband couldn’t stop eating Val’s Creamy Tomato Tortellini Soup and we were lucky enough to find an underground bakery that day where we bought loaves and loves of crusty bread to dip into the sauce. Oh my goodness, my mouth is watering now.

Val’s recipes are easy to follow, and you will absolutely love her! Yield: 6-8

Creamy Tomato Tortellini Soup

Creamy Tomato Tortellini Soup
Cook Time 4 hours
Total Time 4 hours

Ingredients

  • 1 cup diced sweet yellow onion
  • 1/2 cup peeled and diced carrot
  • 1 tsp. minced garlic
  • 2 cans whole, peeled San Marzano tomatoes, undrained
  • 3 cups low sodium vegetable or chicken broth
  • 1 tsp. sugar
  • 1 tsp dried oregano
  • 1/2 tsp. salt, or to taste
  • 1/4 tsp. pepper
  • 2 bay leaves
  • 1/2 cup half-and-half or heavy cream
  • 1/4 cup shredded Parmesan, plus more for serving
  • 1- 20 ounce package of refrigerated cheese tortellini
  • 1/2 cup fresh basil leaves

Instructions

  1. Place onion, carrot, garlic, tomatoes and their liquid, broth, sugar, oregano, salt, pepper, and bay leaves into the insert of a 6-quart (5.5-L) slow cooker. Stir to combine the ingredients well, then cover and cook for 7-8 hours on low, or 3-4 hours on high.
  2. Power off and unplug the slow cooker. Remove and discard the bay leaves and use an immersion blender to blend the mixture until it is smooth. Alternatively, you can transfer the mixture, in batches, to the blender to puree, then return it to the slow cooker.
  3. Plug in the slow cooker. Stir in the half-and-half or the heavy cream, Parmesan cheese, and tortellini. Cover and cook on high for an additional 15 to 30 minutes, until the tortellini is warmed through and is tender. Stir in the fresh basil just before serving with plenty of additional Parmesan on the side.

    It all looks GREAT, love to all, Dad in NY. Main reason I still use cook book at age 85 amount of vinigar in German Potatoe Salad and and if I bake my cookies have made for years at325 or 350.

    I use my hand held cookbooks all the time.
    My favorite is the one my mother had of which I believe was a church cookbook. It has been used so much that it no longer has the cover so not able to give you the title but my mother used it and now I use it quite a bit. Pages are worn, covered with stains, etc. but it is a great little cookbook. I have to keep it in a ziplock baggie cause so many of the pages are coming or are loose & is absolutely fallowing apart.

    Julie,
    I love cookbooks – I enjoy just reading them, but I still get many of my favorite recipes from a hard copy. My favorite is Good Earth Cooking, which is a Mennonite (PA) cookbook. I use their recipe for my coconut custard pie all the time. I also use several church-produced cookbooks from churches my friends go to. I use a recipe for my Fresh Apple Cake from my sister’s church, and a recipe for Hummingbird Cake from a friend who goes to church in our town. Cookbooks are wonderful! AND, I love using my slow-cooker!

    I have 750+ ( I quit counting at
    750 ) hardback cookbooks. I have 14 foit long floor to ceiling bookcase in my dining room that houses this amazing collectio. Of all of my cookbooks, my 50 year old Joy Of Cooking is my very favorite. It is the holy grail of cooking bibles. If you understand the actual premise of base recipes, you can conquer any recipe, no matter how difficult it may be. While I certainly use online resources for cooking these days, I refer to my handheld cook books very very often. My collection is very categorized and very organized. I am quite proud of my collection and love adding new and inventive books to it !

    My Most used and favorite hand held cookbook is a toss up between ,The cake doctor and Paul Prudhomme’s Louisiana kitchen. Valerie’s book sounds amazing.

    <My favorite cookbook is one that belonged to my mother. It is the Good Housekeeping Cook Book printed n 1956. Almost all of her recipes she used from Harvard Beet to Lemon Meringue Pie are there, along with all the splatters and watermarks from using it so much. I have many cookbooks, but this one is my "go to" book for any good simple recipe.

    I love hand held cookbooks and while I can’t really say I have a favorite, I have Mrs. Dull’s “Southern Cooking” cookbook on the kitchen counter right now as I plan to make her crescents (cookies) a little later today. This cookbook was my mother’s and was always her “go to” cookbook. I love the church and community cookbooks; they always have such good recipes in them. And any Southern Living cookbook! The cookbook you are offering sounds great (as does the tomato soup recipe). Thank you.

    This looks like a wonderful cookbook! I have several Pioneer Woman cookbooks, but I most often use one given to me by my Mother, ‘Just a Matter of Thyme’. This was written by two young women from Missouri, about 30 years ago..

    My favorite cookbook is my old Betty Crocker cookbook. My kids are adults now but my oldest requests the farm style oatmeal cookies and both my girls request the beef stroganoff.

    I loved my Betty Crocker from 1973 when I was married. Stolen with everything else from storage unit. I make crock pot dinners almost 6 days a week. My daughter in law works and often pulls a double. Warm for her when she gets home. My son and I can eat at a regular hour. We are starting to share what we eat with his twins. Works out best for us. I fix it night before, she turns it on when she leaves and we all get a good meal. Pizza, lasagna, roast and potatoes. All good.

    I have to choose my first cookbook ever given to me by my Mum at 14 years old: Betty Crocker’s Cookbook. I never really used it until I was living on my own and sorely craved my Mum’s cooking. Beef enchiladas, chicken pot pie, corn fritters and basic white sauce. It’s a flashback of my childhood that I can still recreate today. The binding has split and its held together with an elastic headband, but I treasure it still ❤️

    Yes, 99.5 0/0 of the time I love to use my cookbooks from 2-3 generations back. I own quite a nice library of cookbooks. There’s nothing like turning the pages.

    The Betty Crocker mid-50’s cookbook handed down by family is still my favorite. Thanksgiving stuffing (bread torn by hand) is the only stuffing my brothers and family will eat.

    My favorite cookbook is my Betty Crocker Cookbook published 1972 that I received for my 16th birthday from my mother. It is dog eared and slightly smudged from splashes (oops!) of food and butter. I have all whole 2 book shelf sets of cook books now! I love to pick up regional ones and the local church and 4 H group ones and recently found myself a Fanny Farmer cookbook in our local Goodwill.     I always would go to the Better Homes and Garden Cook book. I had used it so much some of the pages had come loose. I want to try this tomato tortellini soup. Sounds wonderful!

    I agree, there’s nothing like a “real” cookbook! I have so many that I turn to time and again, but my current favorite is Keeping Good Company by Roxie Kelley and Shelly Reeves Smith. The recipes are delish, the stories comforting and the lovely illustrations make my heart happy!!

    I love cookbooks! I’m in a cookbook dinner club that meets every other month. We each bring our favorite cookbook and one course. We then swap cookbooks and courses for our next dinner. At the end of the year we have each had all 6 cookbooks and all 6 courses. It is always fantastic! I’m looking forward to making this soup!

    I own this cookbook and it is so good. I’ve made several recipes out of it but I’ve made the Buffalo Chicken Dip in crock pot probably 3 times, my son loves it. I love Valerie’s website have made many many of her recipes but this cookbook of hers it the best!

    “When I was married in 1965 one of the things my mother gave me was the “Better Homes & Garden” red plaid cookbook. I believe that it was from the 50’s. It helped me so much when I was a new, young
    homemaker; that was 54 years ago. Of course it’s well worn with pages missing in the ring binder. It means the world to me because it was a most thoughtful gift from Mama.
    I don’t usually win things, but maybe this time will be a charm.
