If I had to choose 1 food that I can’t live without, it would be pizza. Even while trying to lose weight with eating low carbohydrates , or low calories, I still need my pizza fix 😎 . My easy quick homemade “271 Calorie Pizza for One” is fantastic for lunch when you are on a low calorie diet plan. It is so filling that when I made the pizza in the photo, I couldn’t even finish the entire thing! 271 calories is not a lot of calories for lunch, and this version is packed with protein (cheese/pepperoni), fiber (fiber rich tortilla), and the tomatoes & mushrooms are good for you. By the way, if you are looking for a low carb pizza, this is what I use. Meanwhile, back at Red’s pizza parlor, let me show you how I do this in about 10 minutes flat. Oh wait, add 2 minutes to eat it 😆 .
I’ve tried many tortillas in my day, and this lower carb version is my favorite. It tastes just like a regular tortilla and is very soft. The photo below shows how I like to spray the tin foil covered pan, and the tortilla first. This prevents the tortilla from sticking after it comes out of the oven, and it also helps the edges crisp up a bit without burning. If you don’t like cooking spray, use olive oil, but your calories will increase dramatically. The second photo shows you what the package of tortillas looks like at the store. I also use these for breakfast by heating up the tortilla on an unsprayed no-stick pan, and adding a fried egg and mashed avocado. They are also great for soft tacos or fajitas.
Dressing up the pizza is one of my favorite parts. You can switch this up any way you desire! I’ve also used canned artichoke hearts, kalamata olives, and even sautéed veggies that were left over. Anything goes, but just remember to adjust your calories accordingly. This is how my “271 Calorie Pizza for One stacks up” calorie wise:
CALORIES:
TORTILLA- 120
CHEESE- 90
SAUCE- 25
PEPPERONI- 26
MUSHROOM- 10
Here’s how it looks after approximately 7 minutes of baking time. You can always go longer if desired to get it crispier, on put it directly on the grate.

Ingredients
- 1 soft tortilla (120 calories)
- cooking spray
- 1/4 cup mozzarella (90 calories)
- 1/4 cup tomato sauce (I use Cento-25 calories)
- 4 turkey pepperoni (approx. 26 calories)
- canned mushrooms (10 calories)
- pinch of dried oregano, dried basil, garlic salt
Instructions
Preheat oven to 400 degrees. Place tin foil on small baking pan and spray with cooking spray. Place 1 tortilla on sprayed tin foil, and spray the edges of tortilla with cooking spray.
Add sauce, cheese, pepperoni, and mushrooms.
Sprinkle all spices being sure to salt the edges.
Bake for approximately 7 minutes.
Slice & enjoy!

I so agree with your dad; looks good to me as well and makes for easy clean-up as well which is a Big plus.
Nice thing about these is that they can be frozen before baking and use for another day, just write the baking instructions and put with your frozen pizzas. Good idea to freeze first and then wrap the individual pizzas once frozen.

I can not wait to try these! Anything with pepperoni ♥ I love to put pepperoni in the microwave and nuke it right before it is super crispy, pull it out and blot. Turns into crispy pepperoni chips! Great snack or tossed in a salad and low on carbs.

I used to make these. I like tomatillos and black olives on them and leave off the pepperoni. When they are finished, I dump sour cream on them and throw my diet out the window.
