I should buy some chickens or something because this is ridiculous.

I intended on sharing just my “Low Carb Quiche” (no crust) recipe, but then once I searched my blog I realized I had 10 egg recipes.  What is up with that?

Well…here’s to eggs and all the benefits they hold.  I eat one almost every day, and they help me stay trim by filling me up with their amazing protein. I hope you enjoy my egg recipes, especially this new crust-less quiche that is fantastic for a low carb diet.  In fact, most of these recipes can be included in a low carb diet.

Yield: 8 servings

Low Carb Quiche

Ingredients

  • 1 cup low fat cottage cheese
  • 2 cups of egg beaters (or 6 eggs & a little water to = 2 cups)
  • 3/4 cup cooked chopped broccoli (I steamed mine in microwave with a little water for 5 minutes prior)
  • 1/2 cup ham (chopped or cubed)
  • 1/4 cup cooked chopped bacon
  • 1/2 cup reduced fat sharp cheddar cheese
  • 1 tablespoon fresh or dried parsley
  • dash each of salt & pepper
  • (optional)1-2 avocados

Instructions

Preheat oven to 375 degrees. Spray a 9 inch pie plate with cooking spray. Mix all ingredients in large bowl, and pour into pie plate. Bake for 45 minutes. Let sit for 15 minutes before serving. I served mine with several wedges of avocado on top. It was so satisfying! (Strawberries go good too.)
