Cauliflower Mashed Potatoes

I’m trying to get in shape for Summer vacation and I’m really trying to monitor what I eat.

Last weekend, I bought some boneless pork chops and planned on grilling them.  When I went in the fridge to look for a side veggie, I noticed the huge cauliflower staring at me.

At first, I was going to roast it like I did here: Roasted Cauliflower, but I remember my friend telling me how she tried mashing cauliflower for mashed potatoes and how much she liked it.

I didn’t have a recipe, but did them exactly like I do mashed potatoes.

These Low Carb Mashed Potatoes are so good, I may have them every week in lieu of regular mashed potatoes.

I think the potato glob photo speaks for itself.

Low Carb Mashed Potatoes Recipe ...I finally tried these and can't believe I never did this before. These were truly satisfying and had so much intense flavor. My husband DEVOURED them.

You can substitute these for any meal that normally requires mashed potatoes.  They were very flavorful, even more so than regular.  They also filled us up like regular mashed potatoes do.  I felt like I just ate the real thing.

1 large cauliflower gave me 4 large servings like you see in the photo…

Cauliflower Mashed Potatoes

Ingredients

  • - 1 large cauliflower
  • - 1 1/2 tablespoons Olivio Light (feel free to use butter, we are watching our cholesterol)
  • - 2 tablespoons light sour cream
  • - S & P to taste

Instructions

- in a large pot, fill 1/3 with water and add 1 teaspoon of salt

- place on burner and turn on medium

- unwrap your cauliflower and chop off the bottom stem (about 1/2 inch)

- wash well with hot water (pesticides are bad for you)

- cut cauliflower into large pieces to fit into the large pot

- bring to full boil, and let boil for 10 minutes

- drain and put back in pot

- mash well with a potato masher (food processor would work excellent)

- add Olivio Light

- add light sour cream

- add S & P and make sure all is combined well

- I mashed mine until the lumps were almost gone

- serve with chicken, steak, pork, etc.

- I use McCormick no MSG pork gravy packets for my gravy

    Mmm these look so savory & yummy, Julie! I’ve had fried cauliflower before, but never as mashed potatoes! DEFF a recipe to TRY asap! Thanks for sharing { Now I’m Hungry hahaha }

    Cauliflower is probably my favorite veggie. I love it any way I have ever had it. I particularly like it in the pizza crust recipe, but mashed is at the top of the list too.

    I have made cauliflower and carrots mashed up some good with becel margarine low fat, salt and pepper
    Also turnips with carrots and mashed potatoes a Newfound recipe.
    I made cauliflower and broccoli soup as well so yummy made any way you like to make soup.
