My husband’s best friend hates pickles.
Can you believe that?
Who hates pickles?
Scott does, that’s who.
Scott, I dedicate this post to you, you non-pickle lover.
Hopefully, you will change your mind after trying these
“Refrigerator Dill Pickles”…
On the other side of the pickle spectrum, there’s our daughter, Daphne.
She LOVES pickles.
She eats pickles any time of day, or night, and it’s hard to keep them in the house.
I also grew up with my Dad canning pickles.
I’ve mentioned before that I am not much of a canner, and I’m more of a freez-er.
With that being said, I’ve still always wanted to try making pickles.
I finally got smart and looked on Pinterest for an EASY “Refrigerator Dill Pickle” recipe.
(follow me on Pinterest HERE)
No canning…just refrigerating.
I got very lucky.
These babies will last in the refrigerator for 6 weeks!
Here are the pickles before I sliced them into spears.
Quite large as you can compare them with the lime.
These made EXCELLENT dill pickles.
Fresh, crisp, salty, tangy, not too spicy, with a splash of sweet.
Perfection.
I hope you give them a try.
That means you too, Scott!

Oooh – I love me dome dill pickles. These look delish (read: Scott’s crazy)! Pinned!
Oh, I made Refrigerated Cucumber Pickles the other day only I sliced my really thin and added lots of thin sliced onions. Will be trying them out in a few weeks.
Where is the link . . . a punch of info shows up about updating my account to enable 3rd party hosting but surely that’s not for me, is it?
The recipe is at the very bottom where it says “CLICK HERE FOR RECIPE”. Here’s the post if interested in trying again, Jan: http://redheadcandecorate.com/2014/08/refrigerator-dill-pickles/
Got it .l.. must be reading challenged. TY!
This recipe looks great! I love that the pickles can last up to 6 weeks! I thought refrigerator pickles didn’t last that long so I was worried. To be fair, they will probably be eaten long before then anyway. Thank you for this recipe!
Hi Billy! They are so good! Enjoy!! ~ Julie
