Hello folks!

I am not a beach person at all.

I must say though, after this Winter, I think I may turn into a beach bum wanna-be.

I would love to be sipping a red drink out of a pineapple watching my hubby build a sand castle about now!

So, while we were stuck cozy inside, I pulled our girls out of hibernation mode, and asked them to come and help me cook.

Our youngest, Valerie, made low fat brownie cupcakes.

She even decorated the plate with chocolate syrup & conf. sugar.

I never got a photo because we gobbled them up too fast.

She did an AMAZING job.

Luckily, the girls have made them before and I posted about it here:

So, while Val made those on her own (way to go Val!),

I taught Daphne how to make an easy

Shrimp Scampi that my sister, Carolyn, taught me years ago.

You really can’t get any easier.

Shrimp Scampi Recipe

Daphne loves shrimp, so she was really into this.

She did an amazing job as well.

Shrimp Scampi

Yield: 4 servings

Shrimp Scampi

Ingredients

  • 1 lb. rinsed raw shrimp (we use fresh frozen uncooked but peeled w/ tail on version)
  • 1/4 stick butter (2 tbsp.)-you can substitute olive oil
  • 2 tbsp. flour mixed with 1/4 cup hot water
  • 16.9 oz. chicken stock (can do more if desired)
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest (grate washed lemon like it's cheese)-this is optional
  • 5 large cloves fresh garlic chopped fine
  • fresh parsley to garnish (we used dried)
  • s&p
  • rice
  • optional-green onion, fresh sliced mushrooms, fresh chopped red bell pepper

Instructions

Sauté garlic on medium low heat in butter in medium pan for 3 minutes to release it's juices.

Add raw shrimp and sauté until pink, approx. 5 minutes.

While the shrimp are cooking add the lemon juice, zest, & chicken stock. Bring to a boil.

Add flour & water mixture. Stir well until it thickens. Reduce heat.

Add s&p to taste. (you must taste it!)

Garnish with parsley.

Optional-saute chopped green onion, sliced fresh mushrooms, and/or chopped red bell pepper in the beginning with the garlic if you wish to add more depth and nutrition to the dish.
