Salmon Twice Baked Potatoes

Some people call them twice baked.

Some people call them double baked.

You can call them anything you like.

I call them…

FABULOUS (I was singing that).

I was pregnant with our first daughter, Daphne,  and Chef Emeril Lagasse was on Good Morning America.

His down to Earth personality won us over back when he had “Emeril Live”.

Heck, we even took a trip to NYC to sit in his live audience. [BEST TIME EVER]

Emeril is famous for his Louisiana style dishes.

My hubby lived there as a teen and makes gumbo often.

So, when I heard Emeril’s directions for these “Salmon Twice Baked Potatoes” on GMA,

I made a mental note and saved it for a New Years Eve party we were having.

They made a scrumptious appetizer.  Very filling, easy to eat, and great at room temp.

Even people that don’t like salmon gobbled them up.

These are great as dinner too.

(my version is slightly different from Emeril Lagasse’s recipe)

Twice Baked Salmon Potato Recipe

New Year's Eve Appetizers

Salmon Twice Baked Potatoes

Yield: 4 servings if for dinner, 8-10 if appetizer

Salmon Twice Baked Potatoes

Ingredients

  • 4 medium potatoes(or 8-12 small potatoes make great appetizer size)
  • 8 oz. fresh salmon (no skin)
  • 3 tablespoons Hellman's light mayonnaise
  • 2 teaspoons Lawry's seasoning salt
  • S & P
  • 2 teaspoons sugar
  • 1 tablespoon olive oil
  • green onion or parsley to garnish

Instructions

Wash potatoes well. Poke hole in each one. Bake at 400 degrees for 1 hour. Let potatoes cool until you can handle them. While waiting for potatoes, prepare your skinned salmon. Sprinkle one side with 1 teaspoon Lawry's, then 1 teaspoon sugar, then a little pepper. Lay salmon seasoned side down in medium hot pan that has been prepped with 1 tablespoon of olive oil. Salmon cooks fast, so season the other side the same way pronto while it is sizzling. Cook salmon until both sides have formed a nice blackened, caramelized appearance. Should take about 7-10 minutes total. Turn up the heat if it's taking too long. This make "smoke" a little, but that's okay. Place salmon in medium bowl, and "fork" it like you do tuna. Go back to potatoes, and cut each one in 1/2. Scoop out the potato with a spoon being carful not to damage the skin too much. Place the scooped out potato filling into the bowl with the salmon. Put potato skins in a glass baking dish that has been prepared with Pam or olive oil. Sprinkle skins with a tiny drizzle of olive oil, and salt. Add mayonnaise to potato filling in bowl. Add a little S & P too. Mix well, and scoop into each potato skin, making a mound like in photo. You can sprinkle w/ cheese, but definitely not necessary. Bake 20 min. at 350 degrees and broil on high the last couple minutes to brown the top. I sprayed mine with Pam, and that worked great. Garnish with green onion or parsley. Serve hot or at room temp. with a salad, or as an appetizer. Original recipe heard on TV with Emeril Lagasse, but I have adjusted it. Yum yum.
