My sister and I were texting some of our recent weight loss tricks to one another last night.
She’s lost weight too, and I’m so proud of her.
Me…I’m at -12 lbs. since June 17th.
I feel great, but I would like to lose another 5.
I have recently begun adding more carbs back into my diet, but I honestly feel better when I eat less of them.
It seems, as soon as I eat pasta, bread, or even rice, I feel bloated, tired, crappy.
I made this “Chicken & Broccoli” for the entire family, and everyone loved it.
My husband and I ate it with out rice, but it would be good both ways.
I hope you try it.
Ingredients
- 1 lb. skinless chicken breast strips/chunks
- 1 small head of broccoli cleaned and sliced in long strips
- 1 cup + 2 tablespoons chicken stock
- 2 tablespoons lite soy sauce
- 1 tablespoon sweet & sour sauce (I use La Choy)
- 1 tablespoon olive oil
- 1 tablespoon sesame oil (this makes it)
- 1/2 cup chopped green onion
- 5 cloves minced garlic
- mushrooms (optional)
- rice (optional)
Instructions
Place fresh raw chicken in large zippy bag with garlic. Double bag it if you are worried it will break. Pound the heck out of the chicken and garlic with a meat tenderizer (flat side only), rolling pin, or bottom of bottle. Place olive oil in large sauté pan on medium heat. Sauté chicken and garlic mixture on medium until chicken starts to brown a bit. Be careful not to burn the garlic. When chicken is cooked thoroughly, remove it all from the pan. Keep any drippings in the pan, and add 1 cup of chicken stock, soy sauce, and sweet and sour sauce. Mix well, and add broccoli (mushrooms are optional). Cover and let simmer for 2 minutes. Add chicken back in, along with green onion, remaining chicken stock, and sesame oil. Mix well on medium heat and serve hot in a bowl, or over rice.

I am definitely going to try this, it looks delicious! I’m the same with carbs, I eat a bite of bread and feel like I need to take a nap. My boys are going to demolish this, I better triple the recipe! 😀
