Are you ready for some…
As a matter of fact…
while photographing this huge platter of bean dip,
I had to stop and have some.
It was in the morning, in my pj’s, on the floor.
You get the idea.
It’s that good,
and it’s good for you.
I have been making this for years.
Even the kiddos enjoy it.
I figured Super Bowl weekend would be a great time to share it.
While you’re out and about on Saturday,
pick up a couple cans of these…
This is my recipe.
There are thousands of bean dip recipes out there,
but I prefer skipping the taco mix.
It’s bad for you, and these ingredients don’t need it.
I truly believe food doesn’t have to be bad for you to taste good.
Isn’t that lime cute?
All you have to do is slice it 1/2 way and twist.
The truth is…the lime was added to my recipe by accident.
I was at a friend’s party and a gentleman was holding his gin & tonic over the bar.
The dip was underneath.
The poor guy was extremely intoxicated and had to be escorted home.
Later, while chatting by the dip with my girlfriends,
we noticed several limes in the dip.
I didn’t put those there?
Turned out Mr.Gin spilled his cocktail in my dip.
But then it clicked.
Lime would go perfect in this dip.
I’ve added it ever since.
Bean Dip Ingredients:
*This version is for a large party. Cut recipe in 1/2 for smaller crowd.
Leftovers can be used for tacos. Just add your favorite taco meat.
2 16 oz. cans refried beans (fat free)
1 16 oz. sour cream (light or fat free)
1 big jar of your favorite salsa
1 8oz. reduced fat cheddar, or jack (I love Sargento)
chopped tomatoes (as many as prefer)
chopped kalamata olives (as many as you prefer)-kalamata have more flavor
chopped green onion or chives
1 fresh lime (save 1 slice for garnish)
Spread beans on platter or plate first. Spread sour cream over beans trying not to mix them up. Spread salsa over sour cream leaving some of the cream to show like in photo. Sprinkle as much or as little cheese as you like. Top with tomatoes, olives, onions. I have often substituted different veggies. Cucumbers work very well. I’m not a fan of lettuce on the dip-it gets soggy. Squeeze your left over lime all over the dip. Garnish with the lime slice like I mentioned above. Serve with your favorite chips & beer.
