Stuffed Celery

You probably think I’m still wrapping Christmas presents
from my last post, don’t you?  Not a chance.
It’s Turkey time…

Happy Thanksgiving to all of you.
I am so Thankful for your friendship & support.
May you and your family share many blessings this Thanksgiving.
Happy belated Thanksgiving to my Canadian friends too!
Now, lets get started on one of my favorite Thanksgiving traditions in our family…Stuffed Celery
What in the heck is stuffed celery?

Thanksgiving is now celebrated at our house.
We are having a small crowd this year.
Just us 4 and my Mom & Dad.
(can’t forget turkey lover, DUDE)
My sisters live in Buffalo, and my in-laws live all over the world,
so it’s difficult to get everyone together at once.  I am so very thankful this year because my Mom became terribly ill right
after this photo was taken.  We didn’t think she was going to make it,
but she pulled through, and she is doing wonderful 🙂
We will be sure to have some fun and
play some games by the fire this Thanksgiving.
As a little girl I loved setting the table for Thanksgiving.
I remember putting name cards at each place setting, folding the napkins all pretty,
and sneaking as many black olives as I could with out anyone noticing.
Now a days I always buy 3 cans of black olives so we don’t run out 🙂
Speaking of olives…
If you like green olives, you will love this simple recipe.
Did you know green olives are unripened black olives?
Yep.
My Mom & Dad served “Stuffed Celery” at every Thanksgiving.
It was usually served on the olive tray with all of the pickles, and olives.
We sound a little obsessed with olives.
Well, we are actually.
Stuffed Celery Serves 8

1  8 oz. 1/3 less fat cream cheese or traditional (softened)
1 cup chopped walnuts
1 cup sliced green olives with pimentos
celery stalks(washed and cut up to your preference in size)
Mix it all together, and spread on celery stalk.
I use a fork, and my fingers to get it on there.  Store in the fridge, and it will keep for at least a week.
I guarantee it will be a hit.  Even my kiddos enjoy it.

I’m on Weight Watchers and have no idea how many points these are but they are so worth putting on a WW menu. This will help me in my journey of following a healthier lifestyle!     My mom used egg salad to stuff our celery, I did it this year (had to transport to in laws’ house) and Nobody else evidently had heard of it, so I am the only one eating it. I used eggs from our own chickens so eh. I like it.
    BUT I don’t remember my mother’s stuffed celery falling over, Is there a special serving tray for stuffed celery so it will stay fairly neat and not tip over and make a mess?

      Great idea! I totally need a celery tray. My parents use to use an olive tray that had sections, but even so it still would get tricky.

    My dear mother used to stuff celery just with Old English cheese and serve it as an appetizer at Thanksgiving and it was always a hit. The cream cheese, Old English cheese, Worchestershire sauce/garlic powder, and chopped Walnuts recipe is what I’m making this Easter to perk it up a bit! It all sounds so good!

    I was pleasantly surprised at how delicious this seemingly basic recipe actually was! I added the nuts in at the last minute so they’d stay crunchy, but I just read your whole post and see that you say it keeps up to a week. Do the nuts stay somewhat crunchy that long? That’d be amazing!

    As a family we are obsessed with olives too. And we also leave out trays of black olives..my boys eat them like candy.

    I am often at a loss for app recipes..I will make this one on Thanksgiving..many thanks.

    You have so much to celebrate with your mums recovery..what a blessing !

    I am not a nut fan. I was wondering if maybe adding craisin’s would be good. Any other suggestions for the crunch that the walnuts give??
