Hi all! My name is Valerie and I’m so happy to be here as part of Julie’s Blogger Spotlight series to share a little bit about what’s cookin’ in and out of my kitchen. I’ve been sharing simple, seasonal recipes for the home cook on my site, From Valerie’s Kitchen, for the past four years.
I’m a big fan of Julie and her site and as I’ve gotten to know her over time, I’m constantly surprised to find how many things we share in common. We both rocked some pretty awesome 80’s hair, married our true loves at a young age, and jumped into this crazy world of blogging at close to the same time. She also happens to have a daughter named, Valerie. I think we were destined to become friends.
Most of my readers are busy people looking for realistic, approachable recipes using simple ingredients to feed their families and I’m here to deliver! My husband and I raised four boys and work together as the owners of a small business so I’m all too familiar with the struggles of getting through those hectic days. With a little advance thought and planning you can get through those crazy days with your sanity intact and a delicious dinner on the table. My aim is to provide wholesome, family-friendly meal solutions that will help you avoid hitting up the local pizza joint or fast food restaurant and I include lots of in-depth instruction and step-by-step photos to help you along the way.
Here is a sample of what’s cooking in my kitchen.
This Skillet Sausage Pasta is one of my favorite busy weeknight meals. Everything cooks together in one skillet, the dry pasta is added and cooks right along with the other ingredients, and the result is fabulous!
My slow cooker is my best friend on busy days. This Slow Cooker Caribbean Pork is loaded with flavor and is so easy to make.
One of my earliest posts and also one of the most popular. This delicious shredded chicken is perfect for all of your Mexican-inspired dishes. Start it before you head out the door and come home to delicious Crock-Pot Chicken Tacos.
Want to know how to get guys to eat salad? Add steak and potatoes! Guys and girls alike will love this hearty Cowboy Steak Salad.
I’m a casserole cook from way back. This Chicken Enchilada Casserole is great for when you have a hungry group to feed or a potluck to attend.
With a little advance prep you can have this tasty Grilled Steak Teriyaki on the table in under 30 minutes.
Try this totally addictive Cowboy Caviar the next time you have a gathering at your house. It’s delicious and good for you. Bonus!
We wouldn’t want to forget about dessert, now would we? This Apple Cake with Butterscotch Sauce will get you in the mood for fall, pronto!
One of my oldest and most coveted dessert recipes is from my mom. Mom’s Lemon Bars will always be my favorite.
Every now and then you’ll see this cute mug appear on my site. From time to time I share the adventures of our two Boston Terriers, Bruno and Bridget. This is what happens when your children head off to college.
I hope you’ll come visit soon for more meal ideas, tasty side dishes, indulgent desserts, and lots of tips, tricks, and how tos. It’s been pretty cool to step away from my kitchen and spend some time on Julie’s turf. Thanks for having me, Julie!
