Have you seen the Arby’s commercial for their “Reuben” sandwich yet?

Apparently I have.  They make it look so good, and juicy, and tender, and salty, and crispy, and…

they show it at 11:00pm…shame on them.

No need to go to Arby’s, or any restaurant.  Have you ever ordered a Reuben out and it comes to the table with all the fat hanging off the meat?  Yuck.  That is gross and so incredibly bad for you.  No need for all that hidden fat and calories.

My “Low Fat Reuben Sandwich” will make you want to run across the kitchen and leap into the air like a little redheaded leprechaun who’s licking their chops and kicking their heels!

The sandwich you see above, I made for my husband and we split it directly after the photo shoot (that was one fast photo shoot).  It was crispy, tender, juicy, tangy, salty, and a tad sweet.  I made 4 of them the next day and we all devoured them again.  They are THAT good!

The only downfall, is that corn beef from your deli is very expensive.  I paid around $12 for 1 pound.  However, I did get 8 sandwiches out of it, so that’s actually a good deal.

Low Fat Reuben Sandwich

Ingredients

  • *lean deli corned beef sliced thin (I found 98% fat free version-ask to look at it first, and ask fat content)
  • *Lorraine Low Fat Swiss Cheese sliced thin (found at most deli's)
  • canned sauerkraut drained
  • *2 tablespoons ketchup
  • *1 tablespoon light Hellman's mayo
  • *your favorite rye bread (I used Jewish Rye)
  • *Olivio (I find it works great for grilling bread)

Instructions

In a small bowl, mix the ketchup and mayo to make your dressing*.

Spread the dressing on 2 pieces of rye bread. If you desire more dressing, you can double the recipe, and save extra for later.

Lay 4-5 slices of corned beef on the dressing of one slice of bread.

Lay 1 slice of cheese on top of corned beef (you can leave out for even less fat/calories).

Scatter as much drained sauerkraut as you prefer over the cheese-we like a lot, and its good for you.

Put the other piece of dressed bread on top, with dressing side down.

Heat up a skillet on medium heat.

Gently spread a little Olivio on the bread like you would for a grilled cheese.

Put that side down on the heated skillet (the entire sandwich should be on the skillet at this point).

While cooking, spread Olivio on the other side of bread.

Let first side cook for about 4 minutes or until browned.

Then gently flip the entire Reuben to get the other side brown.

Cut in half and serve with a pickle & low fat chips (we use Cape Cod Kettle Cooked 40% less fat)

Notes

*I use this dressing for my low fat Big Macs, too. You would be surprised how much flavor it has. My Mother used it as "Thousand Island" dressing for salads when we were little.

  1. I love Reuben sandwiches! I actually had one yesterday for lunch, although I don’t think it was low fat. I’ll give this one a try!

    Also wanted to say thanks for the beautiful printed graphics. I have been dealing with some issues for a year now and this was a great reminder to me that I need to take care of me and not worry about others. I will print this out and hang it in my house as that reminder!
