 I packed on some weight again.

Must have been the brutal Winter.

I can blame it on that anyway.

I finally decided to get back on track.

I’ve cut all bread, pasta, rice, potatoes, and refined sugar out of my diet.

It’s been 1 week, and I’ve lost 4 lbs.

Bloating has decreased, my heart burn problem has disappeared, and I can see a difference naked (EEK!).

Almost forgot, I’m not craving sugar anymore!

My hubby said:

“You’re melting.”

Zucchini Pizza Bites

I did a low carbohydrate diet after I had our babies, and lost 15 lbs. back in 2002.

It works fast.

Sometimes I lose up to 1/2 a lb. a day.

This time, to avoid the “sluggish feeling”  I’m adding a few more good carbs into the mix.

I’m allowing myself fruit and veggies that have carbs in them, where some low carb diets don’t allow that.

These “Pizza Bites” are a great example of that.

Zucchini and tomato sauce both contain carbs, but good carbs.

I’m going to share my journey once I reach my goal.

I still have about 10 lbs. to go.

Until then, I will try to slip in some of the recipes I am using.

You must try these!

Zucchini Pizza Bites

Zucchini Pizza Bites

Ingredients

  • Zucchini (figure 1 per person if this is a meal)
  • Tomato Sauce
  • Mozzarella
  • Olive oil
  • Basil
  • S & P
  • Favorite toppings
  • (I used kalamata olive slices)

Instructions

Preheat oven to 450 degrees. Wash zucchini well. Slice in 1/2 inch slices. Place on cookie sheet. Drizzle olive oil all over them (a little goes a long way). Sprinkle with a little S & P. Mix up with your hands, and spread out again. Top each one with a little sauce, a little mozzarella, and basil. Then top with your favorite topping (I used kalamata olive slices, but mushrooms, pepperoni, whatever works) Bake at 450 for 5 minutes. Then broil on high for 5 minutes. They cook fast! They disappear fast too!

  1. Hi Julie, I saw your link on FB and I hopped over to see how you made these! I am drowning in zucchini right now and looking for more ways to prepare it. I think Leo would really like these. We have been eating low carb since January but have begun to slip lately. These will get us back on track as well as use us the bounty of zucchini! 🙂

    these look really good. never thought about using zuc but i do make eggplant pizza bites exactly like this and they are delish. i am diabetic so i really have to watch my carbs. i very seldom use meat on these. try the eggplant. enjoy have a blessed day/nite

  9. Hi Julie – I’ve been struggling with a few extra pounds, nothing to worry about yet, but clothes are a little too snug and I need to get back on track before it gets worse. I have a low sugar/carb diet most of the time, and am always looking for new ways to make veggies and I love this idea. We have zucchini growing in the garden so maybe this will be a fun weekend meal or snack. Hugs, Holly

  11. As you know, you’ve inspired me to jump on the low carb bandwagon. I’m on Day 3 and I haven’t weighed myself yet but WOW, I never realized how many carbs I consume and how they affected me. I noticed the no bloat thing right away and I also noticed that I’m VERY hungry at mealtime. I’m not a snacker but I’m learning to chomp on some cashews or almonds when I feel that way in between meals. I’m really looking forward to your post!

    Zucchini doesn’t get all watery while being cooked in the oven? I was going to snag a couple zucchini in the grocery store but they were all very small and looked like mini cucumbers. That size equals minimal toppings Ü Wish the deer hadn’t eaten my zucchini plants!
