How did that happen? The week literally wizzed by.
I guess time flies when you’re looking at 16 amazing recipes all week.
This week I’m sharing “16 Scrumptious Summer Side Dishes” before it’s too late!
Can you feel it? Winter is brewing.
Okay, maybe not yet…but it sounded good.
Check these babies out.

It’s a potato salad recipe I learned from my Mom & Dad.

These gals are not only cute, they’re excellent cooks.
There’s even a hubby in the mix!
American Potato Salad
Ingredients:
6-8 potatoes (any kind is fine by me boiled with skin on)
5 eggs hard boiled, peeled, and chopped (do 1 in slices for garnish later)
1 cup reduced fat Hellmann’s mayo (that’s what I use, and I can’t tell the difference)
1 tablespoon mustard (dijon preferred)
1/2 cup chopped dill pickles (more if you like pickles, less if you don’t)
1/4 cup dill pickle juice (that’s the secret)
1/4 cup vinegar
pinch of sugar
2-3 finely chopped celery stalks that have the leafy part on them (love that leafy part)
chopped green onions and/or chives (add as much as you prefer)
1 tablespoon parsley
S & P to taste
Directions: Boil potatoes in salted water until fork tender and falling apart. My father-in-law once explained that if they are over done, they’re ready. This will give the salad that homemade consistency rather than under cooked potatoes. Drain and cool potatoes when finished. While waiting, add all other ingredients except the 1 sliced egg in the pan you just used for the potatoes. Mix well. Add potatoes once they are cooled. Mix well with your clean hands. Pour in pretty bowl. Sprinkle a few chives/pepper on top and place sliced egg like I did in picture. Cool really well for at least an hour, or just dig in and eat it right there before company arrives. 🙂 Hope you like it.

They all look great…but my fav is Jojo’s potato salad, along with Dad being the willing helper. Our family has always shown their love thru food and there are always memories to cherish. I also thought the brussel sprouts looked fantastic and the tomato/potato pie!
