Best meatballs in the world!

 

 

 

Oh Mama!
Have I got a secret for you…
I was 19 (1989) when my husband, Richard, introduced me to his family.
Such a loving, nurturing family.
I felt comfortable immediately.
I fell even more in love with him while watching him with his family.
I often tell our daughter’s…
You can learn a lot from the way a man treats his family.
I really needed to hang on to this guy…
and I did…
with both hands…tight!
Lucky for me, he held on too.

So now…

here we are 23 years later making meatballs on a Friday night
& loving every minute of it.
Lots of love in these meatballs!!
Everyone in the family LOVES them.

I have to give credit to two special women…
Rick’s Grandma Sue & his Aunt Loretta.
They both shared several meatball secrets over the years (me noting every single one).
We have been sneaky…
We have taken both of their ideas, and some of ours,
and combined them to make the best darn meatballs you will ever try.

Ingredients:****You will need prepared tomato sauce (Rick’s recipe here)…jar sauce is fine too.  You can omit the pork in Rick’s recipe and use these instead if preparing the sauce from scratch.
16 oz. ground chicken (trust me…it’s not dry like turkey)
1 cup Italian bread crumbs (I use Progresso)
1 egg
1/4 cup Milk
1/2 cup parmesan cheese
1 teaspoon basil
1 teaspoon oregano
S&P to taste.
Mix it all up, and form balls.  You can dip your fingers in water to help them not stick to your hands. Drop raw balls in hot sauce.  Simmer for about 30 minutes, or longer.
Serve over piping hot pasta of your choice, with sauce & big piece of Italian crusty bread.

  7. Can these meatballs be used as an appetizer in a sauce prepared with grape jelly and barbecue sauce. I have a meatball recipe that I’m planning to use and wonder if the chicken would taste as good as beef?

      Yes, Marcia, that sounds so good! I would follow my recipe, however, cook the meatballs in a pan with a little olive oil first. Then add them to your crock pot sauce or wherever you have it.

    I’m sure you have a good meatball recipe that I will try but I swear my meatballs will knock your socks off! I’ve been making these meatballs all my life and I’ve had not only compliments galore but everyone seems to think I should market them. I wouldn’t even know where to start but I’ve definitely thought about it! Oh and I do not share my recipe, I wanted it for the family. There are 2 people that know it, my husband and the only granddaughter that loves for me to teach her how to cook and bake. My husband has come very close but he’s still off a bit…lol.
